Fresh watermelon rind with a saline edge offers a crisp, mineral-driven foundation on the palate. Bursting with ripe stone fruit, crisp green apple and mid-palate weight the wine is taut and mouthwatering. There’s a subtle savory note, reminiscent of cured citrus adding depth. Floral citrus, finger lime and orange blossom brings aromatic lift and a hint of pithy texture. The finish lingers with wild alpine strawberry leaving a lasting impression of purity and place.

Crafted through the traditional French saignée method and 100% stainless steel fermentation, this rosé of Pinot Noir showcases Bob Cabral's skill in preserving pristine fruit character and vibrant acidity. The saignée technique, utilizing the first-run juice yields elegant color extraction while maintaining the grape's inherent finesse. Cool fermentation maintains the delicate watermelon and nectarine aromatics while developing complexity through precise lees contact. The wine achieves perfect balance between refreshing acidity and concentrated flavor intensity.
