Winemaker’s Notes - A blend of 81% Cabernet Sauvignon and 19% Petit Verdot from the Skellenger Vineyard, the 2021 Cabernet Sauvignon from Valette Wines is crafted in a bold, ripe style, with a deep ruby-purple color and bombastic aromas of cassis, cast iron, peppercorn, and green bell pepper; plus accents of cedar, dark chocolate, and roasted plums. The full-bodied palate is fresher and more lifted than the 2018 version, with ripe, grainy tannins and just enough acidity on the long finish.
